Vinification
We dry farm our vineyard and this year due to the drought we got around 10% of the crop that we normally do. The berries were quite small but packed with flavor. We fortified with aged brandy and kept the residual sugar low so you can still enjoy the classic floral flavors and dark fruit.
Wine Making Process:
We ferment in half ton macro bins. We let the juice cold soak before pitching just enough yeast to keep temperatures manageable without much interference from us. This keeps temperatures low enough to preserve the natural aromatics, retaining fresh and fragrant fruit flavors and color. We perform a malolactic co-fermentation since the yeast creates a nice environment for the bacteria which adds a supple yet elegant texture to the wine and aids to soften the tannins. Our wine is aged to perfection in small American Oak barrels.
